Asafoetida
Asafoetida, or hing, is a pungent gum resin extracted from Ferula herb roots. Raw, it possesses a strong, sulfuric odor, but when tempered in hot oil, it mellows into a flavor resembling sautéed onions and garlic. It is a digestive aid and a staple in South Asian vegetarian cuisine.
